ix ans se sont écoulés depuis l’ouverture de la boutique Breguet sur La Croisette. C’est dire qu’il devenait important de penser à un relooking. C’est désormais chose faite, et le résultat est très étonnant. Même adresse, même superficie, et pourtant… La métamorphose est radicale. Le concept a été repensé dans sa globalité. La boutique accueille les clients dans un espace ouvert, fait de transparence, de clarté, dévoilant d’emblée une sélection des dernières créations « maison ». De quoi offrir un sentiment de décontraction, certes, mais bien entendu sur fond de raffinement et d’élégance.une décoration historique. Ceux qui connaissent bien Breguet seront sensibles à certains clins d’œil « déco » rendant hommage à son patrimoine. Aux côtés d’écrans diffusant des films interactifs, véritables invitations au voyage dévoilant les secrets de la genèse d’une montre, l’intérieur des vitrines reproduit la couleur des cadrans en or argenté des montres classiques. La gravure des murs en verre reprend le mythique guillochage Clou de Paris propre à Breguet. Les ellipses au plafond s’inspirent de la forme ovoïde de la Reine de Naples, collection féminine de la marque inspirée de la montre de Caroline Murat - alors Reine de Naples - commandée à Abraham-Louis Breguet en 1810. À découvrir absolument…

10 years have passed since the Breguet boutique opened on La Croisette. Let’s just say that it was time for a makeover, and it’s already complete! The result is surprising: the same address, the same size, and yet... there has been a radical change. The concept has been completely reconsidered. The boutique welcomes customers into an open space that breathes transparency and clarity, and immediately presents a selection of the latest creations. While the feel may be decidedly low key, rest assured that it is built on refined elegance.historic decoration. Those who are familiar with Breguet will notice certain decorative touches that pay homage to the brand’s history. Alongside screens showing interactive films that take viewers on a journey through the secrets of watchmaking, the shop windows reproduce the silver-plated gold colour of classic watch dials, the engraved glass walls display Breguet’s own Clous de Paris engine turning, and the ellipses on the ceiling are inspired by the oval shape of the Reine de Naples ladies collection inspired by Caroline Murat – then the Queen of Naples – and ordered by Abraham-Louis Breguet in 1810. l’année du jubiléethe Year oF the Jubilee

e n 2013, Jaeger-LeCoultre fête ses 180 ans et rend un vibrant hommage à son fondateur, Antoine LeCoultre. C’est lui qui, en 1833, a créé la manufacture qui, aujourd’hui encore, fait référence dans le monde de la haute horlogerie. On lui doit, entre autres, l’emblématique Reverso, mais aussi des complications comme les sphérotourbillons ou les quantièmes perpétuels. Pour fêter dignement cet anniversaire, la manufacture du Sentier, dans la Vallée de Joux, a imaginé une collection Jubilée « Hommage à Antoine LeCoultre » : elle comprend trois garde-temps rares et précieux, la Master Grande Tradition Gyrotourbillon 3 Jubilée, la Master Grande Tradition Tourbillon Cylindrique à Quantième Perpétuel Jubilée et la Master Ultra Thin Jubilée. Un trio de choc et de charme pour un événement d’envergure.

In 2013, Jaeger-LeCoultre is celebrating its 180th anniversary and paying a vibrant tribute to its creator, Antoine LeCoultre. It was he who, in 1833, founded the manufacturer, a leading name in the world of fine watchmaking even today. He is to thank for the iconic Reverso, as well as complications such as spherotourbillons and perpetual calendars. To give this anniversary the celebration it deserves, the manufacturer, based in Le Sentier in the Joux Valley, has created a «Tribute to Antoine LeCoultre» Jubilee collection. It comprises three unusual and precious timepieces: the Master Grande Tradition Gyrotourbillon 3 Jubilee, the Master Grande Tradition Tourbillon Cylindrique à Quantième Perpétuel Jubilee and the Master Ultra Thin Jubilee. A trio of shock and charm for this high-profile event.

Qu’ont-elles en commun, excepté le fait d’être des blogueuses ? Boucheron ! La célèbre maison les a en effet sollicitées pour une opération très spéciale, baptisée #BoucheronQuatre. They have been asked to interpret the Quatre ring collection through photographs: the finest creations are shown on Facebook, Twitter, Instagram, Weibo and the Boucheron website. While collaboration between major labels and bloggers is nothing revolutionary - many have already tried it - Boucheron is going a step further by sharing these girls’ thoughts and images on their own website, which is usually saved for corporate communications. A rare occurrence in the world of luxury goods which deserves a mention.

the Female dJ revelationla révélation dj au féminin

on diplôme d’école de commerce en poche, Maggy Smiss intègre l’école DJ’s UPCA de Lyon, un établissement qui prépare, en dix-huit mois, au métier de disc-jockey. La voici donc offi ciellement

animatrice musicale et scénique. Dans ce milieu largement masculin, elle s’impose en douceur… mais fermement. « Il y a deux catégories de femmes DJ. La première compte

des fi lles que je comparerais à des potiches misant tout sur leur plastique. Et puis il y a les pros. » Maggy Smiss appartient à cette seconde catégorie et avoue n’avoir jamais rencontré de machisme dans son métier. Elle parle de bonne étoile. « Tout me sourit ! ». Mais elle reconnaît aussi travailler énormément.

L’improvisation, très peu pour elle. La demoiselle prépare tout au millimètre près (branchement des platines, gestion des lumières…) à l’égal de ses confrères masculins. « On l’oublie peut-

être, mais être DJ, c’est aimer les gens, vouloir partager, prendre du plaisir à les voir danser ».

Paris, son berceau, Lyon, sa ville d’adoption, et Cannes, plus précisément la ZPlage, où elle fait quelques petites

incursions pendant l’année et où elle s’installe, depuis deux ans maintenant, le temps de la saison estivale. Son premier contact avec le Grand Hyatt Cannes Hôtel Martinez remonte à 2007. Envoyée à Cannes pour animer la traditionnelle soirée de l’ILTM (Marché International du Tourisme de Luxe), elle découvre l’établissement et l’ambiance d’un événement majeur. « Cette soirée reste un souvenir marquant : la déco, les coiffeurs, le maquillage, la scène… J’étais totalement séduite ». Depuis 2012, c’est le dancefl oor de la Zplage qu’elle fait désormais danser, durant tout l’été, du 1er juillet à fi n août*.Résolument tournée vers la pop et l’électro funk, elle mixe du Michaël Jackson, du Blondie mais aussi les Rolling Stones, les Daft Punk, Maceo Parker. On l’apprécie pour ses mix éclectiques et ses mélanges pop rock groovy.* sauf les soirées du Festival d’Art Pyrotechnique

s With her business degree in the bag, Maggy Smiss joined the UPCA DJ School in Lyon, an institution that trains disc jockeys in just 18 months. A legitimate musician and stage performer. Slowly but surely she is making her mark in this male-dominated environment. «There are two types of female DJ. The first describes the girls that I would compare to bimbos, who put everything into their appearance. And then there are the pros.» Maggy Smiss belongs to this second category and confesses she has never experienced male chauvinism in her profession. She speaks of lucky stars. «Everything smiles back at me!». But she also acknowledges that she works hard for it. She’s not one to improvise. The young miss prepares everything, right down to the last millimetre (setting up her decks, managing lighting, and so on.), just like her male counterparts. «People forget sometimes, but being a DJ is about loving people, wanting to share, and enjoying watching them dance».

from the iltm to ZplageToday, Maggy Smiss juggles her life between Paris, her hometown, Lyon, her adoptive city, and Cannes. Or, more specifically, ZPlage, where she drops in throughout the year and has set up shop in summer for the past2 years.Her first contact with the Grand Hyatt Cannes Hotel Martinez goes back to 2007. Sent to Cannes to play at the traditional ILTM (International Luxury Travel Market) event, she discovered the hotel and the hype of a major event. «I still have a vivid memory of that night: the decor, the hairstyles, the make-up, the staging... I was blown away.» Since 2012, she has been getting the Zplage dancefloor going all summer from 1 July to the end of August*. Resolutely geared towards pop and electro funk, she mixes Michael Jackson, Blondie as well as the Rolling Stones, Daft Punk and Maceo Parker. Un écrin de rêve, entre ciel et mer, qui devient régulièrement le théâtre de tournages et de prises de vues. Ce jour-là, l’une des suites Prestige Mer, la terrasse de la suite Penthouse et le toit de l’hôtel ont accueilli l’équipe de maquilleuses et d’habilleuses, le top model et le photographe. Natasha Poly est revenue sur son rôle d’égérie : « Cette rencontre avec L’Oréal Paris n’est sans doute pas le fruit du hasard. Avant d’être mannequin, je rêvais de devenir maquilleuse professionnelle. A dreamy setting between sky and sea that is regularly transformed into a theatre of movie sets and photo shoots. On this day, one of the Prestige Mer suites, the balcony of the Penthouse suite and the roof of the hotel played host to a team of make-up artists and stylists, the supermodel and her photographer. Natasha Poly is back in her role as ambassador: «This meet-up with L’Oréal Paris was no chance encounter. Before I was a model, I used to dream of becoming a professional make-up artist. I’ve always loved cosmetics, and L’Oréal Paris’ products are some essentials I’m never without when I’m backstage at shows.» The young woman wore Nutrigold, a face product currently being launched in Russia and Eastern Europe, and new Eau de Teint.

Etincelantes, majestueuses, oniriques, elles habillent avec grâce les célébrités les plus exigeantes. Si le couturier porte avec tant de virtuosité la mode libanaise au rang

international, c’est parce que la passion du tissu brûle en lui depuis son plus jeune âge. Né en 1964 au Liban, il ressent très vite naître en lui le besoin d’habiller les femmes. Il se met à dessiner des croquis dès l’âge de 9 ans, découpe des patrons et confectionne lui-même des tenues pour ses sœurs. Ses matières premières ? Les nappes et rideaux de sa mère, qu’il déchire, réinvente et transforme. Alors que d’autres jouent aux billes dans la cour d’école, Elie Saab cultive déjà sa différence et canalise son talent. Un groupe de clientes fidèles se confectionne autour de lui au fil du temps. Adolescent, il habille les femmes de son quartier ; il avoue vouloir les sublimer, les rendre encore plus belles. « Certaines femmes autour de moi ne faisaient pas attention à leur style, leur image. J’avais envie de les rendre plus féminines. Je voulais simplement faire des robes qu’elles auraient

Thanks to a passion for fabrics that has been burning within him since he was a young boy, the designer has brought Lebanese fashion into the international limelight with flair. Born in 1964 in Lebanon, the desire to dress women was kindled within him from an early age. He started sketching at the age of 9, cutting templates and creating outfits

for his sisters. His raw materials? His mother’s tablecloths and curtains, torn up, reinvented and transformed. While his classmates were playing with marbles in the school playground, Elie Saab was cultivating his unique skill and channelling his talent. A group of loyal clients gradually started to form around him. As a teenager, he dressed the women in his neighbourhood; he says he wanted to enhance them, make them even more beautiful. «Some of the women around me didn’t seem to care about their style or their image. I wanted to make them more feminine. I simply wanted to make dresses that they would want to wear and that would make them look elegant,» the designer explains. At 18, the young prodigy opened his

workshop in Beirut, choosing to skip design school. He said he found it boring. Ambitious and determined, he surrounded himself with a team of fifteen employees and set to work on his first collection. «I had already decided what path to take and knew that I could do something in this area. This was no stroke of luck. I had already been working hard at it for five years.» His designs soon went on to dazzle the female population and began to be sold not only in Lebanon, but further afar.

international acclaimIn 1997, Elie Saab became the first foreign designer to join the Camera Nazional de la Moda (National Chamber for Italian Fashion), influencing the development of Italian fashion across the world. One year later, he launched his first prêt-à-porter collection at Milan Fashion Week. In 2000, the Chambre Syndicale de la Haute Couture in Paris invited him to showcase his collections and, two years later, become a member. The same year that his label would earn international acclaim. Actress Halle Berry collected her Oscar for Best Actress in an Elie Saab creation. Published in the press worldwide, this lavish dress would make the designer’s name known to Hollywood stars such as Catherine Zeta-Jones, Eva Longoria and Rihanna.Fusing influences from East and West in his designs, Elie Saab gracefully blends ultra-feminine fabrics such as silk tulle, organza, sequin and crystal embroidery... But Beirut remains his main source of inspiration and where he finds home. «I stay true to my roots and my Lebanese

un rayonnement internationalEn 1997, Elie Saab est le premier créateur étranger à intégrer la Camera Nazionale de la Moda (Chambre nationale de la mode italienne), qui coordonne le développement de la mode italienne dans le monde. Un an plus tard, il lance sa première collection de prêt-à-porter automne-hiver lors de la Fashion Week à Milan. En 2000, il est invité à Paris par la Chambre syndicale de la haute couture pour présenter ses collections ; il s’y installera deux ans plus tard. C’est cette même année que sa griffe va connaître un rayonnement international. L’actrice américaine Halle Berry remporte l’Oscar de la Meilleure Actrice vêtue d’une création Elie Saab. Diffusée dans la presse du monde entier, cette robe somptueuse va faire connaître le créateur auprès des stars hollywoodiennes telles que Catherine Zeta-Jones, Eva Longoria ou encore Rihanna.

Croisant les influences d’Orient et d’Occident dans ses silhouettes, Elie Saab mêle avec raffinement des matières ultra-féminines comme le tulle de soie, l’organza, les broderies de paillettes et de cristaux… Mais Beyrouth reste sa source première d’inspiration et surtout son pays de coeur. «J’insiste sur mes origines et ma qualité de Libanais. C’est une grande responsabilité pour moi. Je représente le beau visage du Liban et cela me rend très fier.» En 2005, il inaugure, dans un immeuble moderne de cinq étages, son studio de création, une boutique de prêt-à-porter et ses salons de couture. Deux ans plus tard, c’est à Paris au cœur du triangle d’or qu’il continue de se développer : il ouvre une boutique de plus de mille mètres carré près des Champs-Elysées. Aujourd’hui, le joaillier de la mode - qui a reçu la médaille de Chevalier de l’Ordre National du Cèdre en remerciement de son travail en tant que designer - est, à 48 ans, à la tête d’un véritable empire. Des boutiques ont fleuri à Londres, Dubaï, Hong Kong, Mexico City ou encore Genève. 70 points de vente dans le monde et plus de 50 pays accueillent ses collections aux allures enchanteresses. Haute couture, prêt-à-porter mais aussi des accessoires et une ligne de parfum ont vu le jour. En 2011, sa première fragrance, Le Parfum, est conçue en collaboration avec le nez Françis Kurkdjian. Fleur d’oranger, jasmin, patchouli, le créateur libanais révèle les senteurs de ses origines avec volupté et délicatesse, à l’image de sa marque de fabrique. This venture won him the prize for best perfume, best bottle and best advertising campaign in the women’s category from the French arm of the Fragrance Foundation in 2012.

Tout au long de l’année, la vie du palace est ainsi rythmée par la venue de milliers d’entreprises et d’organisateurs de congrès et séminaires qui y organisent leurs manifestations de prestige.L’hôtel dispose en effet d’une quinzaine de salons modulables, parfaitement équipés (air conditionné et matériel de communication ultra-performant en sonorisation et projection, en bureautique, en technique audio-visuelle et informatique, traduction simultanée…), parmi lesquels les salons « Royal Galuchat », « Ébène »,« Galuchat », « Acajou », « Matisse », « Chagall », « Picasso », qui peuvent accueillir 50 à 550 personnes assises et plus de 1 000 en cocktail. Déjeuners ou dîners - dans le cadre de réunions, séminaires de travail ou prestigieuses soirées de gala - sont régulièrement organisés. Ainsi, depuis plusieurs années le Grand Hyatt Cannes Hôtel Martinez organise au début du mois de décembre la soirée d’ouverture de l’ILTM (Marché International du Tourisme de Luxe). Throughout the year, consequently, the life of the luxury hotel follows the pace of thousands of companies and of conference and seminar organisers who use it to stage their prestigious events.The hotel, in fact, has fi fteen multi-purpose meeting rooms, equipped to perfection (with air conditioning and high performance communication equipment for sound and projection, for offi ce automation, for audio-visual and computing technology and simultaneous translation...). Some of these are the ‘Royal Galuchat’, ‘Ébène’, ‘Galuchat’, ‘Acajou’, ‘Matisse’, ‘Chagall’, and ‘Picasso’, which can cater for 50 to 550 people, seated, and more than 1,000 for reception events. Receptions, lunches or dinners are regularly organised in conjunction with meetings, work seminars or prestigious gala soirees. For many years, then, the Grand Hyatt Cannes Hotel Martinez has been holding the opening reception for the ILTM (International Luxury Travel Market). This is usually an event for 3,000 people. For this occasion, a wealth of different dishes is carefully prepared by the production kitchen: 12,500 items, both savoury and sweet, 5,000 skewered items for the barbecue stand as, also, a choice and unbelievable quantities of other dishes made from seafood...This demonstrates the wonderful adaptability of the banqueting department.

u Grand Hyatt Cannes Hôtel Martinez, on peut tout faire ! ». Christophe Raux sait de quoi il parle. Cela fait six ans qu’il supervise le département des banquets de l’hôtel avec un entrain et une créativité sans faille. Mais il l’avoue volontiers : son métier, il l’adore ! « C’est clair, je suis tout le temps sur le terrain, pour gérer les imprévus, dispatcher le personnel, superviser l’ensemble des manifestations. Tout doit être parfaitement coordonné ».

Avec ses 2 500 m2 de salons, le Grand Hyatt Cannes Hôtel Martinez est en effet l’établissement qui, après le Palais des Festivals, possède la plus grande capacité d’accueil d’événements. Normal que les manifestations s’y multiplient. « Un Festival, c’est 10 jours non-stop. Il m’arrive parfois de gérer 5 soirées simultanément. Une année, je me souviens, je devais superviser en même temps plusieurs événements accueillant un total de plus de 3500 personnes ! La pression est énorme, le département des banquets est à mon sens l’un des plus rudes : on monte, on démonte en permanence, parfois nous avons 10 minutes seulement pour débarrasser 1 000 couverts ! C’est dur, mais tellement grisant ! ». La routine ? Christophe Raux ne connaît pas, lui qui passe allègrement des séminaires d’entreprises aux soirées glamour, des dîners de gala aux concerts… « Je me souviens encore d’une soirée japonaise grandiose où l’on avait entièrement reconstitué le décor d’un grand restaurant nippon étoilé, avec des geishas, des posters géants de cerisiers en fleurs. Cela reste l’une des soirées les plus mémorables de ma vie. À chaque fois, mon seul objectif est de voir le client repartir avec le sourire en ajoutant : je reviendrai ! ».

“At the Grand Hyatt Cannes Hôtel Martinez, you can do anything!” Christophe Raux knows what he is talking about. He has been supervising the banqueting department of the hotel for six years with flawless enthusiasm and creativity. But he readily admits he adores his job. “It’s clear that I am there all the time to manage unexpected incidents, give orders to the staff and supervise all the different events. Everything has to be perfectly co-ordinated.” With its two 500 m2 meeting rooms, the Grand Hyatt Cannes Hotel Martinez is, in fact, the establishment that, after the Palais des Festivals, has the largest hosting capacity for events. It is, therefore, to be expected that the number of events there is growing. “A Festival - it’s ten days non-stop. Sometimes I end up managing five different receptions. One year, I remember, I had to direct at the same time several events welcoming more than 3,500 people ! The pressure is enormous, the banqueting department is, in my opinion, one of the toughest: you set things up and take them down all the time, sometimes we only have ten minutes to clear 1,000 places! It’s tough, but so exhilarating!” What’s the routine? Christophe Raux, a man who is able to go cheerfully from business seminars to glamorous parties, and from gala dinners to concerts, doesn’t know … “I also remember a grandiose Japanese party where we replicated the decor of a big, Nippon, starred restaurant, in its entirety, with geishas and giant posters of flowering cherry trees. That remains one of the most memorable receptions of my life. Each time, my only aim is to see the client leave with a smile on their face, saying, ‘I’ll be back!’”.

You could nickname her: “the smile” of the Grand Hyatt Cannes Hotel Martinez! She started in 1998 as a receptionist and then Sandra Fardin joined the banquet co-

ordination service three years later. “We assure the interface between the hotel and the client, for whom we are the principal and privileged contact. It is then up to us to convey the minutest details of what they require to the operational team supervised by Christophe Raux, with whom we get on tremendously well!”His masterwords: organisation, communication, flexibility. His most important weapon: a smile and a touch of irony. His motto: you don’t achieve anything by getting stressed! “Our task is to meet client expectations by organising the event that they desire. Which means that you have to think of everything and plan it all in advance: make sure that security meets required standards, reserve parking places for logistics, check the menus with the chef… You cannot allow yourself to forget anything at all. That is why we arrange very detailed briefings with the different teams concerned, so that each contributes what they can to the event.” As the time where a client brought an elelphant with them, on their fiftieth birthday. “We had to establish where it would go, make sure it didn’t slip, reinforce the floor it was going to walk over… What is important is that, when they arrived, the client didn’t notice anything, and everything worked, miraculously, like clockwork!”

n pourrait la surnommer : « le sourire » du Grand Hyatt Cannes Hôtel Martinez ! Entrée en 1998 comme réceptionniste, Sandra Fardin rejoint le service de la coordination des banquets trois ans plus tard. « Nous assurons l’interface entre l’hôtel et le client, dont

nous sommes le contact principal et privilégié. À nous ensuite de retranscrire sa demande dans les moindres détails à l’équipe opérationnelle supervisée par Christophe Raux avec qui nous nous entendons à merveille ! ». Ses maîtres mots : organisation, communication, flexibilité. Son arme numéro Un : le sourire et un zeste de second degré. Sa devise : rien ne sert de stresser ! « Notre mission est de répondre aux attentes du client en organisant l’événement qu’il souhaite. Cela signifie qu’il faut tout penser et anticiper en amont : vérifier que la sécurité est aux normes, réserver des places de stationnement pour la logistique, valider les menus avec le chef… On ne peut pas se permettre d’oublier quoi que ce soit. ’il est arrivé au Grand Hyatt Cannes Hôtel Martinez en 2000 comme simple technicien, Bertrand Chabrier en est aujourd’hui le seul dédié exclusivement aux banquets. Sa mission ? « Coordonner toute la partie technique entre le client, le prestataire et l’hôtel. Cela va de la gestion logistique (éclairage, musique…) au montage et démontage des

structures lors des événements. Et, bien sûr, la sécurité : s’assurer qu’elle est aux normes, que les produits utilisés sont non inflammables, que les évacuations incendie sont facilement accessibles. J’y prête un œil très vigilant. Pendant l’ILTM, le MIPIM et le Festival de Cannes, il nous arrive d’accueillir parfois des cocktails comptant jusqu’à 4 000 personnes. Il est important de veiller à ce que tout se déroule pour le mieux ». La polyvalence, c’est justement ce que Bertrand Chabrier aime avant tout dans son métier. La diversité, aussi. « Je vis parfois des instants magiques. Comme la fois où je devais chapeauter une soirée à la ZPlage pendant le Festival. Tout d’un coup, Emir Kusturica a improvisé un concert avec son groupe. L’ambiance était géniale, tout le monde dansait. Il y avait un parterre de stars : Milla Jovovich notamment… Ou encore cette fois où nous avons accueilli, toujours pendant le Festival, un concert privé de Jamiroquaï. J’ai eu la chance d’assister à toutes les répétitions, j’avais l’impression de faire partie des spectateurs privilégiés ». Avant d’ajouter : « Cela demande une organisation et une préparation irréprochables ; ce sont parfois de véritables challenges, mais à l’arrivée, on en garde des souvenirs inoubliables ».

And, of course, security: to make sure it reaches required standards, that the products used are non-flammable, that fire exits are easily accessible. I keep a very watchful eye on that. During the ILTM, the MIPIM and the Cannes Festival, we can sometimes be asked to hold receptions for up to 4,000 people. It is important to make sure that everything goes as well as possible.” versatility is rightly what Bertrand Chabrier likes most about his job. Also diversity. “There are sometimes moments that are quite magical, like the time that I had to organise a party on the ZPlage ( - hotel beach) during the Festival. Suddenly, Emir Kusturica started an improvised concert with his group. There was a great atmosphere, everyone was dancing. There was an orchestra of stars: not the least of them being Milla Jovovich, … Or another time where, again during the Festival, we hosted a private concert by Jamiroquaï. I’ve been lucky enough to be there for all the rehearsals, I had the feeling that I was one of the special members of the audience.” Before adding: “It requires faultless organisation and preparation; sometimes this is a real challenge, but once you achieve it, you have some unforgettable memories.”

They are what you would call a dynamic duo! Joël Manson and Yves Lutineaux are the two chefs at the head of the production kitchens for the Grand Hyatt Cannes Hotel Martinez. “We complement each other marvellously, confides Joël, who started working in the kitchens of the luxury Cannes hotel twenty years ago. Yves excels at producing large quantities, in bulk, while myself, I’m better at detailed work, with one priority always in mind: working for quality and giving priority to fresh products. We make everything ourselves!” So, the one really complementing the other, the

two men manage all the banquets and events of the luxury hotel, with sometimes 2,000 and up to 3,000 guests to serve in one, single evening. “I often compare our work to that of long-distance runners”, explains Yves, “with endurance as what we have in common. Two whole days’ preparation are sometimes necessary for one single event. If the menus are confirmed in advance with organisation for banquets, it is regularly the case, especially during the Festival, that we only have a few hours to prepare dinner for a hundred covers! It is stressful and stimulating at the same time, because without adrenaline, we would not manage to meet the most urgent demands of the clients.” And Joël adds: “There have been times where we’ve had 7,000 people for a cocktail dinner! We had worked with eight extra staff, night and day for six days to achieve this. My most vivid memory? Without doubt, the B20. There were eighteen of us working in the kitchen producing dishes for 400 famous people, the Great of this world!”

tandis que moi, je suis plutôt doué pour des tâches minutieuses, avec toujours en ligne de mire une priorité : travailler la qualité en privilégiant les produits frais. Nous fabriquons tout nous-mêmes ! ». Très complémentaires, les deux hommes gèrent donc tous les banquets et manifestations du palace, avec parfois 2 000 et jusqu’à 3 000 convives à servir en une seule soirée. « Je compare souvent notre travail à celui des coureurs de fond, explique Yves. Notre point commun : l’endurance. Deux jours entiers de préparation sont parfois nécessaires pour un seul événement. Si les menus sont validés en amont avec la coordination des banquets, il nous arrive régulièrement, surtout pendant le Festival, de n’avoir que quelques heures pour préparer un dîner pour 100 couverts ! C’est stressant et stimulant en même temps, car sans adrénaline nous n’arriverions pas à satisfaire les demandes les plus urgentes des clients ». Et Joël d’ajouter : « Il nous est arrivé d’avoir 7 000 personnes en cocktail dînatoire ! Nous avions travaillé avec 8 extras nuit et jour pendant 6 jours pour réaliser cette performance. Mon souvenir le plus marquant ? Incontestablement le B20. Nous étions 18 en cuisine à produire des mets pour 400 personnalités de renom, les Grands de ce monde ! ».

e Grand Hyatt Cannes Hôtel Martinez, Nadia Saguia le connaît comme sa poche. Depuis 1990, c’est elle qui a en charge l’entretien de tous les lieux publics de l’hôtel. Et tous les jours, c’est

le même rituel : « Le matin, je commence par m’occuper des bureaux. Je poursuis par l’escalier principal, je fais le tour du hall, des ascenseurs, puis du lobby et enfin du Relais ». En coulisses, Nadia Saguia veille au grain. Discrètement mais sûrement. « Je dois avoir l’œil sur tout. Comme j’interviens dans les lieux publics, il suffit parfois d’une minute pour qu’un incident se produise : une chaise mal rangée, un détritus jeté par terre… C’est à moi, dans ces cas précis, de visualiser les priorités et de savoir où et quand intervenir ». Nadia l’avoue volontiers : elle adore la période du Festival ! « J’aime quand ça bouge, quand l’hôtel est plein de vie. Chaque congrès est différent, mais le Festival, c’est vraiment un moment à part : il y a des stars de partout ! Une année, alors que je commence tôt le matin et termine normalement aux alentours de 15h, on m’a demandé si je pouvais revenir travailler le soir en renfort : Brad Pitt et Angelina Jolie venaient dîner à la Palme d’Or. Je n’ai pas hésité une minute ! ». Et alors ? « Ils sont encore plus beaux en vrai ! », dit-elle en souriant.

Nadia Saguia knows the Grand Hyatt Cannes Hotel Martinez like the back of her hand. Since 1990, she has been responsible for maintaining all the public spaces in the hotel. And every day it’s the same ritual: “In the morning, I begin by working on the offices. I continue with the main stairway, I go all round the hall, the lifts, then the entrance lobby and finally ‘Le Relais’ restaurant.” Behind the scenes, Nadia keeps a close eye on what is happening. Discretely but surely. “I have to watch everything that is going on. As I am responsible for public spaces, a problem can arise at a moment’s notice: a chair that is out of place, rubbish thrown on the ground… It is up to me, in these particular cases, to see the priorities and to know where and when to intervene.” Nadia readily admits that she loves the Festival period. “I love it when it’s busy, when the hotel is full of people. Each conference is different, but the Festival, it’s really an exceptional time: there are stars everywhere! One year when I started early in the morning and normally finish around 3pm, I was asked if I could come back and work in the evening as back-up: Bradd Pitt and Angelina Jolie were coming to the Palme d’Or for dinner. I didn’t hesitate for a second!” And…? “They are even better-looking in the flesh!” she said, smiling.

« Louis Vuitton Travel Book » qui tient à la fois du carnet de

ette première série comporte quatre titres consacrés à quatre destinations : l’Île de Pâques par l’Américain Daniel Arsham, Londres par la Japonaise Natsko Seki, Paris par le Congolais Chéri Samba et New York par le Français

Jean-Philippe Delhomme. Deux autres ouvrages sont programmés en 2014 : venise par le mangaka Jiro Taniguchi et le vietnam par l’auteur de bandes-dessinées italien Lorenzo Mattotti. Et pourquoi pas un jour des Louis vuitton Travel Book ciblés sur les lieux exotiques choisis pour accueillir les Maisons Cheval Blanc du groupe LvMH, aux Maldives, demain en Égypte ou dans le Sultanat d’Oman ?

Chacun de ces beaux objets imprimés, bilingue français – anglais, comporte entre 100 à 120 illustrations inédites faisant appel, selon les auteurs, au dessin, à la peinture ou encore au collage. L’exercice rend ainsi hommage à un genre littéraire méconnu, celui du carnet d’écrivains voyageurs. « Figuratives ou plus épurées, les œuvres originales nées de ces voyages font l’objet, pour certaines d’entre elles, d’une démarche d’acquisition de la part de la Maison Louis vuitton, intégrant ainsi le fond d’œuvres d’artistes contemporains que constitue le malletier » indiquent Les Éditions Louis vuitton qui comptent une troisième collection de récits littéraires intitulée « voyager avec ».

Chaque titre de la collection « Travel Book » est proposé en édition limitée de cinquante exemplaires numérotés et signés par l’artiste, exclusivement disponible dans une sélection de magasins Louis vuitton. Ce tirage de tête réunit le « Travel Book » relié en cuir, présenté sous coffret et accompagné d’un dessin original de l’artiste imprimé sur papier vélin d’Arches.

La maison d’édition du numéro un mondial du luxe rappelle à cette occasion que le livre a toujours bénéfi cié d’une place de choix dans son histoire : « Gaston-Louis

La plupart des 300 000 restaurants tokyoïtes ont un point commun : ils cultivent un degré de spécialisation vertigineux. Ainsi, pour s’initier au soba, ces fines nouilles de blé noir, il faut aller chez Hosokawa. Les sushi se dégustent au Sushi Saito : les produits - poisson et riz - sont exceptionnels et la technique du « maître » du même acabit. Pour croustiller de plaisir ? Cap sur Ten-Ichi ; les meilleurs tempuras de la ville, c’est ici et nulle part ailleurs. Frits sans être gras, parfumés mais pas épicés, ils sont parfaits. De petites bouchées-bijoux. Là encore, la présentation est sans fausse note, dans des assiettes ou bols en céramique, verre, pierre, bois ou laque. Seule règle, ne pas oublier ses bonnes manières. Pas question de gesticuler avec ses baguettes ou de les pointer sur quelqu’un. Pour le reste, on a tous les droits, surtout celui de se régaler !

star warsWhere the world’s best chefs do battle! In 2013, Tokyo was once again flooded with macarons: 14 three star restaurants, or four more than Paris. But this should come as little surprise in a country passionate about fresh, pure products (with very little seasoning): the heady aroma of excellence. Most of Tokyo’s 300,000 restaurants have one thing in common: they are incredibly specialised. This means that to try soba, the fine buckwheat noodles, you have to go to Hosokawa. For sushi, head to Sushi Saito: the rice and fish are exceptional, as is the expertise of the “master”. Feel like something crispy? It has to be Ten-Ichi, where you can find the best tempura in the city bar none. Fried but not greasy, seasoned without being spicy: just perfect. A real delight for your taste buds. The presentation is impeccable, in ceramic, glass, stone, wood, or lacquer plates and bowls. Only one thing is essential: good manners. Don’t gesture with your chop-sticks, not point them at anyone. Apart from that you can do what you like: especially help yourself!

Ce programme a pour but de donner une formation technique hôtelière gratuite de 6 mois à des jeunes de 17 à 20 ans. C’est-à-dire un métier d’avenir car le Brésil prend conscience de son potentiel touristique et veut se donner les moyens d’une infrastructure adaptée. Or, les

notions d’accueil et de service ne sont pas immédiatement évidentes pour les Brésiliens. De plus, les écoles spécialisées sont chères et rares. Il y a donc un besoin urgent. Les chiffres parlent d’eux-mêmes : 65 % des jeunes formés par notre hôtel depuis le départ (soit environ 40 personnes) ont déjà intégré nos équipes. C’est une opération gagnant/gagnant.

Le programme RSE « Hyatt Thrive » se veut local. Comment conciliez-vous cette exigence avec la taille d’une mégalopole comme São Paulo ? Oui, c’est vrai. São Paulo, c’est 11 millions d’habitants ! Le secret, pour éviter de diluer nos initiatives dans la masse ou de passer à côté des besoins réels, est de bien penser la (ou les) cible(s). Un exemple : le projet « Formare » de la Fondation Iochpe. Le but : sélectionner 20 jeunes entre 16 et 18 ans issus pour la plupart des favelas. L’objectif : leur faire suivre un programme spécial (1/2 journée école, 1/2 journée hôtel) pendant 1 an, en partenariat avec l’université fédérale du Paraná. L’implication de part et d’autre est très forte. À tel point qu’elle rejaillit sur la famille proche. Je pense au cas de cette jeune fille qui, à la fin de son année de formation, a acquis assez de confiance en elle pour aider sa mère sans emploi à trouver enfin un travail stable !

Quelles sont vos prochaines idées RSE à l’étude ou en chantier ?Déjà, les employés du Grand Hyatt São Paulo sont invités à sensibiliser leur voisinage en collectant de l’huile de cuisson. Chaque litre rapporté leur fait gagner des places de cinéma. Quant à l’huile, une ONG spécialisée se charge de son recyclage pour fabriquer des savons. Ce n’est pas tout : notre hôtel réduit sa consommation d’eau, de détergents, etc. Ce qui est significatif vu la taille de notre blanchisserie industrielle interne. Enfin, les questionnaires en ligne que remplissent nos clients sont à la fois source d’idées et d’encouragements. Savoir que nous marquons leur séjour grâce à une philosophie simple, mais investie au plan humain, est une satisfaction quotidienne. On se sent utile…

17-20. Hospitality is a profession of the future in Brazil, a country that is becoming aware of its tourism potential and is looking to develop adequate infrastructure. In the local culture, the idea of Service isn’t a given, and specialist schools are expensive and hard to find, meaning there is an urgent need for other solutions. The figures speak for themselves: 65% of young people trained by our hotel (around 40 people) have already found work with us. It’s a win-win situation.

Hyatt Thrive is a local CSR programme. How can you reconcile this with a metropolis the size of Sao Paulo? Good question. 11 million people live in Sao Paulo! The key to stopping our initiatives from being diluted in a sprawling city or from missing the real needs is to carefully identify our target(s). One example is the “Formare” project with the Iochpe Foundation. The aim is to select 20 young people aged 16-18, mostly from the favelas, and have them take a special course (half-day at school, half-day in the hotel) for one year in partnership with Paraná federal university. Both sides are hugely committed to the project, so much so that the effect spills over onto their families. I’m thinking specifically of the young girl who, upon completing the year long course, had developed enough self-confidence to help her unemployed mother find stable employment!

What other CSR ideas are currently in the pipeline?Grand Hyatt Sao Paulo employees are already encouraged to raise awareness in their communities by collecting cooking oil. Every litre collected wins them cinema tickets. A specialist NGO then recycles the oil to make soap. That’s not all: our hotel is also reducing how much water and detergents it uses, amongst other things. This has a considerable impact given the size of our internal laundry. The online questionnaires that our guests are invited to complete also provide encouragement and new ideas. Knowing that we have marked their stay with a simple philosophy that is nonetheless people-centred is a continuous source of satisfaction. We feel useful...

Even as a child, little Pablo showed signs of a precocious talent, some saying he had a real gift. Far from reining him in, his parents did all that they could to see his talent flourish. He attended several art schools before setting off with his family first for Barcelona, and then to Madrid. He was admitted to the prestigious Academia de San Fernando but health problems forced him to end his study of art and to become a designer. He was only 20 years old when his work was exhibited for the first time in the “Els Quatre Gats” café. That same year – we are now in 1900 – Picasso travelled to Paris and discovered a Montmartre that was brimming with artistic energy. His return to Spain was short-lived, and 1901 saw him once again in the French capital. Until 1904, he divided his time between his home country and his adopted one, a time that would later be known as his “blue period”.

L’œuvre en question s’intitule « Les Demoiselles d’Avignon » et elle le propulse immédiatement chef de l’avant-garde picturale. Le cubisme est né. En 1917, il voyage en Italie et dessine les costumes et les décors de « Parade », une production des Ballets Russes de Diaghilev. Ce grand amateur de femmes rencontre Olga Khokhlova qui deviendra la première madame Picasso. C’est le début de sa période néoclassique.

from the bateau-lavoir to boisgeloup châteauPablo Picasso produced his first masterpiece in 1907, three years after moving to the Bateau-Lavoir, a dilapidated building in Montmartre that was a favourite haunt for artists of all disciplines. The piece in question was “Les Demoiselles d’Avignon”: it propelled Picasso to the avant-garde of the painting world, and cubism was born. In 1917, he travelled to Italy and designed the costumes and sets for “Parade”, a ballet composed for Diaghilev’s Ballets Russes. It was here that Picasso, a great ladies man, met Olga Khokhlova, the woman that would become the first Mrs Picasso, an event that

marked the beginning of Picasso’s neoclassical period. Leaving behind the Bateau-Lavoir, the couple moved to the rue de la Boétie on Paris’ right bank. From 1920 onwards, the artist made regular trips to the Côte d’Azur: fi rst to Les Sables villa, and then to the Cap d’Antibes Hotel. He went on to stay at La Vigie in Juan-les-Pins, the Belle Rose and Bachlyk villas, Chêne Roc, and the Sainte-Geneviève villa, all in the same resort. It was in 1946 that Romuald Dor de la Souchère suggested that Picasso set up his studio in Château Grimaldi, a building which today stands as the Picasso Museum. The museum is home to 240 paintings by Picasso and, until 2014, fi ve ceramics are on loan from the Barcelona Ceramics Museum to commemorate the 40th anniversary of Picasso’s death. Picasso’s interest in ceramics dates back to his childhood, and he regularly worked on ceramics from 1946 onwards following his encounter with Georges and Suzanne Ramié, who were then managing the Madoura studio in Vallauris.

from cannes to mouginsWhen Picasso was “unfaithful” to Juan-les-Pins in 1927, spending the summer in the Madrid villa on the Boulevard Alexandre III in Cannes, his dealer, Rosenburg, said: “Juan-les-Pins will be sad to see its centre go, but you’re going to make a fortune in Cannes...”. He felt such an affi nity for the place that in 1955 he set up his easel in the hills of Cannes, in the villa La Californie. Françoise Gilot had left him two years earlier, taking their two children, Claude and Paloma, with her. From then on Jacqueline Roque Hutin would share the artist’s life and he off ered her a ring, making her his second wife.

L’intérêt du catalan pour cet art remonte à sa jeunesse et il s’y consacrera régulièrement dès août 1946, lors de sa rencontre avec Georges et Suzanne Ramié, qui dirigent alors l’atelier Madoura à vallauris.

His life came to resemble a carnival. He was everywhere, and no matter what he did the press loved to capture his image whether he was alone, with Jacqueline, or his children, who were always there during the summer. To escape the surrounding clamour, he bought Vauvenargues château at the foot of Sainte-Victoire: this was where he came when he needed time to himself, and was also home to his private art collection that included signed pieces by Cézanne, Matisse, Derain, Rousseau. He resided in Cannes, in this Belle-Epoque house with a luxurious garden until 1961. Cannes is also paying homage to Picasso this summer, with an exhibition entitled “The Nude and Freedom”. Notre-Dame-de-Vie, in Mougins, would be his last home. It was where he lived and worked, seldom leaving, and then only to travel to Vauvenargues. One of his favourite subjects was the musketeer, and Jacqueline can be glimpsed in all of his female subjects. Until May 12, the Mougins Classical Art Museum (MACM) is exhibiting “Picasso in Mougins”. A retrospective of his final years in Notre-Dame-de-Vie featuring original pieces, namely a splendid lino-cut in “The Bearded Man” (1962), and photos by his friend, Lucien Clergue. In Mougins yet again, the André Villers Photography Museum has a permanent collection that can be visited all year. André Villers met Pablo Picasso in 1953. The painter enjoyed contact with photographers whose work was founded in art, rather than simple snapshots. A genius portrait artist, Pablo Picasso was an ideal model for a photographer. The painter even gave the young photographer his first professional camera. The two men worked together on a range of pieces: Villers taking photos, and Picasso arranging them.

de la Sainte-victoire ; c’est là qu’il s’isole et entrepose sa collection personnelle d’art, des œuvres signées Cézanne, Matisse, Derain, Douanier Rousseau. Il demeurera à Cannes, dans cette maison Belle-Epoque avec son jardin luxuriant jusqu’en 1961. Cannes lui rendra d’ailleurs hommage à son tour cet été à La Malmaison une exposition intitulée « Le nu en liberté ». Notre-Dame-de-vie, à Mougins, sera son dernier refuge. Il y vit, y travaille, ne quittant sa propriété que pour de rares séjours à vauvenargues. L’un de ses sujets de prédilection est le mousquetaire et Jacqueline s’immisce dans ses personnages féminins. Jusqu’au 12 mai, le Musée d’Art Classique de Mougins (MACM) donne à voir « Picasso à Mougins ». Une rétrospective sur ses dernières années à Notre-Dame-de-vie, avec des œuvres originales de l’artiste, notamment une linogravure magnifique, « L’Homme barbu », produite en 1962, et des photos prises par son ami Lucien Clergue. Toujours à Mougins, le Musée de la Photographie André villers possède, quant à lui, une collection permanente, que l’on peut apprécier toute l’année. C’est en 1953, qu’André villers rencontre Pablo Picasso. Le peintre entretient des rapports privilégiés avec les photographes dont le travail repose sur un intérêt artistique, allant au-delà du simple cliché. Portraitiste de génie, Pablo Picasso est un modèle idéal pour un photographe. Le peintre offre d’ailleurs au jeune photographe son premier boîtier professionnel. Les deux hommes vont alors créer des œuvres à quatre mains : des photographies prises par villers, découpées par Picasso.

Certes, mais pas toujours par choix, comme le souligne Guy Savoy : « Je voyage très peu et j’avoue que j’ai mis du temps à accepter les invitations. Je me rends deux fois par an à Singapour et j’y reste trois jours. J’aime rester

chez moi et m’absente rarement. Je suis chef cuisinier ! ». A l’inverse, Jean-Georges vongerichten et Andoni Luiz Aduriz bouclent leurs valises dès qu’ils le peuvent. « J’adore les voyages !, dit le premier. J’y puise mon inspiration et j’en ramène toujours quelque chose. » Logique quand on sait que sa réussite, cet Alsacien l’a bâtie aux Etats-Unis. Ses déplacements, Andoni Luiz Aduriz les compare à des« universités de la vie qui m’offrent l’opportunité d’apprendre et de connaître ce que je ne connais pas. » Inventifs – pourrait-il en être autrement ? –, ces chefs n’ont pas besoin d’aller au bout du monde pour trouver des produits à la mesure de leur talent. Tous privilégient bien sûr l’authenticité et la qualité. « Il y a davantage de noblesse dans un chou frais que dans un homard surgelé », assure Guy Savoy.

Maybe, but not always by choice, as Guy Savoy points out: “I seldom travel, and I must admit it took me a while to start accepting invitations. I fl y to Singapore twice a year and stay for three days. I like being at home and only rarely go away. I’m a chef after all!”. Jean-Georges vongerichten and Andoni Luiz Aduriz, on the other hand, pack their suitcases the fi rst chance they get. “I love travelling!” says the fi rst. “That’s how I get my inspiration and I always bring something back from it.” Which makes sense when you remember that this chef, from the Alsace region of France, built his successful career in the United States. Andoni Luiz Aduriz likens his travels to «a University of Life that gives me the opportunity to discover things I didn’t know about before». They are all imaginative - and we wouldn’t have it any other way! These chefs don’t need to go to other side of the world in search of products worthy of their talent. Needless to say, authenticity and quality are important to them. «Fresh cabbage offers a lot more character than frozen lobster», explains Guy Savoy.

exoticism at its best!According to the dictionary, an object is considered exotic if it does not belong to the West. In other words, we associate this word with objects from far-off places. Andoni Luis Aduriz takes this idea even further: anything he does not yet know he considers exotic. «Nowadays, exoticism relates to knowledge. I live up in the mountains, near San Sebastian, so anything that I’m not familiar with is in fact exotic.» Jean-Georges vongerichten adds his touch of exoticism with a little lemongrass or ginger, sometimes both. Guy Savoy’s main exotic tool is pepper. It might seem fairly commonplace, but it deserves to be used nonetheless. «It gives a dish its final touch, a stage where one cannot afford to cut corners!» Highly seasoned professionals, whose reputation precedes them, all agree on this one thing: there can be no high-flying or long-lasting culinary talent without passion. «If you take away our enthusiasm, what’s left?» our three head chefs ask in unison. Twenty-first century chefs are the whole package: a company director, a manager and a psychologist (in their spare time), who knows how to cook. «I often compare our profession to theatre. People pay to come and see us. Our task is to connect with our audience, to communicate», concludes Jean-Georges vongerichten. One thing is certain: they know how to communicate, both through words and their recipes.

Histoires de cHefsA STORY OF CHEFShristian Sinicropi reste le chef incontesté de La Palme d’Or. Auréolé de ses deux étoiles, il règne sans partage sur ce haut lieu de la gastronomie, signant au passage la création de certaines pièces de vaisselle. Chaque année, il accueille d’autres toques dans sa cuisine ; en 2013, ce ne sont pas moins de 10 étoiles qui ont signé un menu inédit : Guy Savoy a préparé une soupe d’artichauts à la truffe noire, ainsi que sa brioche feuilletée aux champignons et à la truffe. Jean-Georges Vongerichten, un turbot sauvage, émulsion épicée au « thé Jade » chou romanesco rôti. Christian Sinicropi proposait du Black Angus cylindrique cuisiné tout simplement, déclinaison de pommes de terre parfumées de

truffe blanche, jus à l’inspiration d’un civet. Quant au benjamin de l’équipe, Andoni Luiz Aduriz, il a démontré l’étendue de son talent avec de délicates cuillerées de contrastes affinés crème de lait, feuilles et douceurs. Une partition sans fausse note, jouée à 8 mains.

Christian Sinicropi remains restaurant Palme d’Or’s unrivalled executive chef. Exalted with two Michelin stars, he single-handedly rules this exceptional gourmet venue, creating croquery pieces as he goes. Every year he invites other world-renowned chefs into his kitchen. In 2013, no less than 10 Michelin-star chefs put their signatures to an unprecedented menu: Guy Savoy prepared an artichoke and black truffle soup with a mushroom and truffle puff-pastry brioche. Jean-Georges Vongerichten whipped up wild turbot, presented with a spiced jus fashioned from «Jade tea» and roasted Romanesco broccoli. The local star (Christian Sinicropi) offered a cylindrical Black Angus tenderloin, cooked with simplicity, accompanied with white truffle potatoes and a stew-inspired sauce. As for the baby of the team, Andoni Luiz Aduriz demonstrated the extent of his talent with his delicate dollops of cream, leaves and sweetness for a refined contrast. A faultless, 8-player performance.

Moi, j’habite dans la montagne, près de San Sebastian et tout ce que je ne connais pas relève de l’exotisme. » Sa petite touche d’exotisme, Jean-Georges vongerichten la trouve dans la citronnelle et le gingembre, ensemble ou séparés. Pour Guy Savoy, le produit qui mérite de l’intérêt – malgré son apparente banalité - est le poivre. « Il apporte à un plat la touche finale avec laquelle il ne faut pas mégoter ! ».Professionnels avertis dont la réputation n’est plus à faire, tous ces chefs s’accordent sur un point : sans passion, point de cuisine de haut vol qui dure dans le temps. « Enlevez l’enthousiasme, que reste-t-il ? », demandent en chœur nos trois toques. Le chef du xxIème siècle est « un package », un chef d’entreprise, un gestionnaire, un psychologue (à ses heures), qui doit savoir cuisiner. « Je compare notre métier au théâtre. Les gens paient pour nous voir. A nous de créer une connexion avec notre public, de communiquer », conclut Jean-Georges vongerichten. Une chose est sûre : eux communiquent, par le verbe et les recettes.

n ne se dit pas artiste, l’art, on le vit. » Christian Sinicropi, lui, le pratique au quotidien. De l’art culinaire à l’art au sens large du terme, il n’y a qu’un pas qu’il franchit allègrement. Donc, il cuisine, il peint, il sculpte.

« Tout dépend de mon degré de concentration et de mon inspiration. » Il a découvert, voici quelques années, la céramique et il s’y adonne pleinement, créant des assiettes et autres contenants utilisés dans les restaurants du palace. Cette année encore, il a imaginé une collection dédiée au président du jury du Festival du Film, Steven Spielberg. Il a aussi préparé un hommage au cirque Gruss. Mais chut, le secret sera bien gardé jusqu’au jour J. Lorsqu’il n’est pas au piano, devant son tour ou son chevalet, Christian Sinicropi court les expos, ici et ailleurs. Il hume l’air du temps, s’inspirant de tout, formes, couleurs et odeurs.

«I don’t think of myself as an artist. Art, it should be lived. « Christian Sinicropi practises it every day. From culinary art to art in the broadest sense of the word, there is merely a fi ne line that he crosses joyfully. So he cooks, he paints, he sculpts. «It all depends on my level of concentration and my inspiration.» A few years ago he discovered ceramics and devoted a great deal of time to it, creating plates and other pottery used in the hotel’s restaurants. This year, he has created a collection dedicated to president of the Cannes Film Festival jury, Steven Spielberg. He has also prepared a tribute to the Gruss Circus. But sshhh... he’s keeping it under wraps until the very day arrives. When he is not sat at the piano, in front of his potter’s wheel or at his easel, Christian Sinicropi is hopping from exhibition to exhibition. He inhales the scent of the times, inspired by everything: shapes, colours and odours.

des goûts éclectiquesPour cet inconditionnel de Dali et de Cocteau, le musée Cocteau de Menton reste un passage obligé. « J’aime Jean Cocteau pour ses multiples talents et pour sa crédibilité : il demeure un exemple. J’ai d’ailleurs visité sa maison à Saint-Jean-Cap-Ferrat, comme Picasso et Matisse avant moi. » Il franchit régulièrement la porte de la Fondation Maeght à Saint-Paul-de-vence et se souvient de l’exposition Giacometti, « Un joli moment ». Mettre ses pas dans ceux de Christian Sinicropi, c’est appréhender l’art avec un grand « A ». Parce que ses goûts sont éclectiques et qu’il est curieux de tout. Ainsi fait-il des incursions régulières à La verrerie de Biot, fasciné par le travail des souffleurs de verre : il s’imagine bien s’essayer à cet art exigeant un jour prochain. À vallauris, il se sent presque chez lui et apprécie la cité des potiers pour son histoire. À valbonne, c’est la salle Saint-Esprit qui l’intéresse. Plus que des œuvres précises, Christian Sinicropi parle de lieux, d’artistes, de sensations, d’atmosphères. Parmi ces endroits magiques où il se rend régulièrement, le chemin de l’Hôpital, à Pégomas, « Là où la maison Chanel a replanté des champs de roses de mai », mais aussi le fort de l’île Saint-Honorat au large de Cannes et Grasse, « Pour ses parfumeurs. Je suis fasciné par le métier de nez et plus particulièrement par Jean-Claude Ellena, le parfumeur de la maison Hermès. »

il a un rêve.Proche de Patrick Moya, son complice de longue date, Christian Sinicropi, s’il doit citer deux autres artistes contemporains, n’hésite pas une seconde : Steph Cop et Nicolas Lavarenne. Le premier, issu de la scène oldschool graffiti parisienne, a créé Aro, un personnage récurrent. Le second sculpte des êtres de bronze qu’il juche sur des échasses, « Un travail aérien d’une grande originalité. » Adepte du « No limit », le chef a un rêve, enfin deux plus exactement. Être exposé dans une galerie d’art de New York le comblerait. Au risque de paraître prétentieux, il avoue également cette envie de laisser une trace d’un parcours, de moments d’une vie, de rencontres. « J’aimerais créer un lieu autour de l’art et réunir des personnes et des œuvres qui me touchent. C’est possible, il suffit d’y croire. » Christian Sinicropi y croit.

eclectic tastesFor this Dali and Cocteau-devotee, the Cocteau Museum in Menton is a must-visit. «I love Jean Cocteau for his multiple talents and his credibility: he remains a fine example even today. I’ve also visited his house in Saint-Jean-Cap-Ferrait, like Picasso and Matisse before me.» He regularly crosses the threshold of the Maeght Foundation in Saint-Paul-de-vence and remembers the Giacometti exhibition as a «beautiful experience». Renowned gallery La Malmaison is «An address that brings art to Cannes, an eminently cultural town, thanks especially to its Film Festival.» To put yourself in Christian Sinicropi’s shoes is to perceive art with a capital «A». His tastes are eclectic and his curiosity knows no end. And so he regularly swoops into La verrerie de Biot, fascinated by the work of the glassblowers: he can see himself trying his hand at this sophisticated art one day soon. He feels almost at home in vallauris and is fond of the potters’ town for its history. In valbonne he’s drawn in by the Salle Saint-Esprit. Rather than just naming specific works of art, Christian Sinicropi speaks of places, artists, sensations and atmospheres. Another of these magical places he regularly enjoys visiting is Le Chemin de l’Hôpital, in Pégomas, «Where Chanel has its rose de mai fields», as well as the fort on Ile Saint-Honorat off Cannes and Grasse, «For its perfumers. I am fascinated by the perfume profession and, more specifically, Jean-Claude Ellena, the «nose» of Hermès.»

he has a dream.Close to Patrick Moya, his longstanding collaborator, if he had to name two other contemporary artists, he wouldn’t hesitate for a second: Steph Cop and Nicolas Lavarenne. The first name rose from the old-school Parisian graffiti scene and is the creator of Aro, a recurring character. The second sculpts bronze beings which he perches on stilts, «Hugely original elevated artwork.» A firm believer in «the sky is the limit», the chef has a dream. Well, two in fact. To have his work displayed in a New-York art gallery would be the achievement of a lifetime for him. At the risk of sounding pretentious, he confesses that he also wants to leave a mark on the world, glimpses of a life, encounters. «I would like to create a place centred on art, a place that brings together the people and works that are dear to me. It’s possible, you just have to believe.» Christian Sinicropi believes.
