Soza WeightLoss striving tohelp peoplemake lifestylechanges

Obesity has risen to epidemicproportions in this country and inour state. According to areport released in September of 2015 by Trust for America’sHealth and The Robert WoodJohnson Foundation, Louisiana isnow ranked 4th in obesity in thenation – not because our obesity rate is going down(it’s now at 34.9%), but because 3other states have surpassed us. WDSU, Channel 6 reportedobesity by parish, in which itshowed East Baton Rouge ashaving a 34% obesity rate with

 Ascension at 35%. This means over1/3 of our residents are obese –this does not include the numberthat are considered overweight.

Soza Weight Loss Clinic isdetermined to educate when itcomes to healthy eating. This isone reason we begin the New Year with what has become our annualSoza 60 Day Slim-Down Chal-lenge. We start the first week of 

January and complete it within thefirst week of March. With so many people making New Year’s resolu-tions, this has become a fun and

competitive way to allow peopleto put that resolution to thechallenge. It also gives us 60 daysto work with, guide and teachpeople on how to make healthy lifestyle changes to theirexisting diet.

So many people think they areeating healthy, when in reality they 

are missing the mark. Our job is toget them back to the basics of cooking and eating – freshproteins, vegetables and fruit. Oursociety as a whole has lost one of the greatest arts – that of cooking! We are also teaching them to readlabels and how to identify thehidden sugars and chemicals thatare being put in our foods today.

This year’s contest started off  with 20 contestants, 18 womenand 2 men, with 15 making it thedistance. Our top ten finishers arealways rewarded with great prizesdonated by local merchants, this

 year those prizes were valued atover $3,200!!!

This gives the contestants evenmore incentive to finish in the top10. Winners are decided based onpercentage of body weight lostover the 60 day period. This makesit fair for everyone participating

regardless of size, sex or amount of  weight they want to lose. OurTop-10 winners were: 1st placeJerry Fairbanks losing 13.67% body fat, 2nd place Judith Roberson with 13.4%, 3rd place Angela Allen with 11.95%, 4th place Penny L. with 11.47%, 5th place Curtis M. with 11.04%, 6th place Georgia G. with 10%, 7th place Freda M. with8.88%, 8th place Kelli F. with 8.66,9th place Lorna F. with 6.95% androunding out the top 10 in 10thplace was Lisa M. with 6.65%.These 10 individuals dropped acombine total of 225.8 pounds and138.75 inches which is fantasticover the course of just 60 days.Jerry Fairbanks, this year’s winnerand Soza’s first male champion,says that “someone told me a longtime ago that losing weight is a“lifestyle change” – and I hatedthat!! But Karen and the Sozaprogram helped me change my lifestyle and I have lost 55 poundsand will continue to lose withSoza. With Soza, you see theresults right now – not in a month

Cajun Livin N Cookin hosted afundraising event to supportDreams Come True. Rodney andLeslie Dupuy started the South

Louisiana Crawfish BoilingContest a couple of years ago andit grew into the event that was atLamar Dixon Expo Center inGonzales. The South LouisianaCrawfish Boiling Contest wasaccompanied with a JambalayaCooking Contest, craft and carshow. All of the proceedsbenefitted the Dreams Come TrueFoundation.

This year we double our numberof cooks with 41 crawfish cookingteams set out to showcase theirsecret recipes. We would like to thank the

public for coming out andhelping us raise money for the

Dream Kids. We had recordattendance this year, and weraised a record amount. We donot have the grand total yet, but

 we know its over double last years amount raised. ($24,000)

Hundreds of children in Ascension Parish are growinggardens at their schools and anew TV show called “GreauxingGardens” is tracking theirprogress. The “GreauxingGardens” show premieres this

 Wednesday, April 13th, 2016 onEATEL cable channel four at 7

p.m. in Ascension Parish. It willalso air Saturday, April 16th at 7p.m. and every Wednesday and

Saturday after that. The show  will also be uploaded to the“Greauxing Gardens” Youtubechannel on Wednesday night at7 p.m. The first episode willfeature the following schools:Gonzales Middle School, LakeSide Primary School, andDutchtown Middle. Other

schools that will be featured onthe show in the future are St. Amant Primary, Sorrento

Primary School and Central

Primary School.The show focuses on tracking

the growth of six of the 14schools participating in the LSU

 AgCenter’s school gardeningprogram called GreauxingGardens, hence the name of theTV program. LSU AgCenterHorticultural Specialist KikiFontenot, who organizes thegardening program, says theLSU AgCenter is contacted allthe time about starting school

gardens. “This program helpsmake it more efficient to holdteacher workshops, teach lots of teachers at one time and trainthem how to garden and follow their progress,” Fontenot says.

Cajun Livin’ N Cookin’ host

and Ascension Parish native,Rodney Dupuy came up withthe idea to put the show on theair. He says he thought it’d beneat to teach the community how to garden while thechildren are learning how togarden. “People in generaldon’t want to ask questions butthey’ll sit there and watch TV and learn on their own,”Dupuy says.

The show is produced and

hosted by Taylor Frey, a 2014LSU graduate. Frey grew up ona farm in Pointe Coupee Parish,and now owns a productioncompany called Taylor FreyProductions. She says she thinks

gardening program possible. With their donation the AgCenter was able to give 14schools in the parish all thematerials they needed to startthe gardens, including wood tobuild the raised beds, gardensoil, seeds, tools and irrigationsystems. “Right now the

 AgCenter works with about240 schools across the state

 with the Greauxing Gardensprogram,” Fontenot says.

 Whether you call it bad breathor halitosis, it’s an unpleasantcondition that’s cause for

embarrassment. Some people with bad breath aren’t evenaware there’s a problem. If 

 you’re concerned about badbreath, see your dentist. He orshe can help identify the causeand, if it’s due to an oralcondition, develop a treatmentplan to help eliminate it.

What you eat affects the air you exhale. Certain foods, suchas garlic and onions, contribute

to objectionable breath odor.Once the food is absorbedinto the bloodstream, it istransferred to the lungs, whereit is expelled. Brushing, flossingand mouthwash will only mask the odor temporarily. Odorscontinue until the bodyeliminates the food. Dieters may develop unpleasant breath from

infrequent eating.

If you don't brush and flossdaily, particles of food remainin the mouth, collectingbacteria, which can cause badbreath. Food that collectsbetween the teeth, on thetongue and around the gumscan rot, leaving an

unpleasant odor.

Bad breath can also be caused  by dry mouth (xerostomia), which occurs when the flow of saliva decreases. Saliva isnecessary to cleanse the mouthand remove particles that may cause odor. Dry mouth may becaused by various medications,salivary gland problems orcontinuously breathing throughthe mouth. If you suffer from

dry mouth, your dentist may prescribe anartificial saliva, orsuggest using sugarless candy and increasing your fluid intake.

Tobacco products cause bad  breath. If you use tobacco, ask  your dentist for tips on kickingthe habit.

Bad breath may be the sign of amedical disorder, such as a localinfection in the respiratory tract,chronic sinusitis, postnasal drip,chronic bronchitis, diabetes,gastrointestinal disturbance,liver or kidney ailment. If yourdentist determines that yourmouth is healthy, you may bereferred to your family doctor

or a specialist to determine thecause of bad breath.

 Maintaining good oral healthis essential to reducing bad  breath. Schedule regular dental visits for a professional cleaningand checkup. If you think youhave constant bad breath, keepa log of the foods you eat andmake a list of medications youtake. Some medications may play a role in creating mouth

odors. Let your dentist know if  you've had any surgery or illnesssince your last appointment.Brush twice a day with fluoridetoothpaste to remove fooddebris and plaque. Brush yourtongue, too. Once a day, usefloss or an interdental cleaner toclean between teeth.

 Mouthwashes are generally cosmetic and do not have along-lasting effect on badbreath. If you must constantly use a breath freshener to hideunpleasant mouth odor, see

 your dentist. If you need extrahelp in controlling plaque,

 your dentist may recommendusing a special antimicrobial

mouth rinse. A fluoride mouthrinse, used along with brushingand flossing, can help preventtooth decay.

Clean your tongue! Most of the odor that comes from yourmouth is on your tongue. Use

 your toothbrush withtoothpaste, reach back as far aspossible, and brush forward.

 A tongue scraper works evenbetter, which can be found at

any pharmacy or supermarket.The metal ones are dishwashersafe and allow you to cleanthem regularly.

Using Trusts forLong-Term CarePlanning: Part 1It’s April, and tax seasonprocrastinators are rushing to gettheir papers in order – taking acloser look at their finances andperhaps revisiting planning forthe future. Unfortunately, eventhe most astute planners may oneday find themselves aging, inneed of assistance, and unpre-pared for the financial demands of long-term care. Medicaid is justone source of long-term careassistance with complicatedregulations that catch many of my clients – and their financialadvisors – off guard. Thankfully,

there are some ways that qualifiedattorneys can help.

First, let’s take a closer look athow Medicaid works. Medicaid,not to be confused withMedicare, is a joint federal andstate program that providesmedical care to eligible persons.To be categorically eligible inLouisiana in 2016, an applicant’smonthly income cannot exceed$2,199, and countable resourcescannot exceed $2,000. If married,the spouse living outside thenursing home is allowed to keepadditional resources. Certainresources are non-countable indetermining whether theapplicant meets the resource test.The main non-countableresources are: the principalresidence, one automobile,funeral contracts, burial plots andterm life insurance. With some

additional exceptions, almost allother resources are countable indetermining Medicaid resourceeligibility.

In an attempt to reach theresource limits, many people de-cide to give their property away to their children. If they neednursing home care, they find outthat Medicaid has a 5-yearlook-back period for transfers of property below fair market value.

So they have made themselvesineligible for Medicaid to pay fortheir nursing home costs. Thiscan be quite surprising sincenursing home care in Louisianacosts approximately $60,000+ per

 year. Fortunately, this ineligibility may be avoided with properadvance planning.

Creating a trust during one’slifetime and moving assets intothat trust is one strategy used forlong-term care planning. There

are two basic types of trusts that you might create during your life-time – a revocable trust or an ir-revocable trust. These trusts arenot interchangeable when itcomes to long-term care plan-ning. A revocable trust is one that

 you place your assets in, but from which you can remove the assetsor change the terms of the trust if 

 you choose to do so. Since youcan remove assets and change

 who receives the assets in thetrust, the assets owned by thetrust are countable for Medicaidpurposes.

 An irrevocable trust is one where you cannot remove assetsand where you cannot change thetrusts terms once it is established.This type of trust removes theproperty from your ownership soit is not a countable asset forMedicaid if you are not abeneficiary of the trust who hasrights to the assets in the trust.

 When planning ahead forlong-term care, we often use anirrevocable trust to transfer assets

so that after the 5 year Medicaidlook-back period, the assets areno longer considered ascountable assets for determiningMedicaid eligibility. Whether or not you should use

an irrevocable trust for Medicaidplanning should never bedetermined without the assistanceof a qualified elder law attorney.There may be significant penaltiesimposed by Medicaid fortransferring assets to a trust, and

there may be significant gift,estate and income tax issuescreated by transferring assets to atrust. Also, you may have moraland ethical questions about

 whether you should engage inthis type of planning.

Next month we will discussusing trusts for VA planning andsome often important issuesregarding the use of trusts.Until then, remember that anirrevocable trust may be very useful for long-term care

planning, but it is not the right fitfor everyone and it must becarefully drafted for eachindividual situation to avoidunintended consequences.

For the past 19 years, the signaturefundraising event for the membersof the Rotary Club of Gonzaleshave been its annual Food Fest.This year’s event at the GonzalesCivic Center was held on March29th.

 According to Food Fest Chairman,Gary Laiche, more than 500 peo-ple showed to sample deliciousfoods from 39 area restaurants inand around Ascension Parish.

Michelle Desoto of Gonzales has

attended the event for many years with her family. “My mom hasbeen purchasing tickets for mem-bers of my family for many years.

This is a wonderful event. Thefood is always good, and youcouldn’t possibly eat everythingthat is offered,” she said.

Food offerings this year includedeverything from etouffee and craw-fish bisque to enchiladas andchicken fingers and everything inbetween. The $25 ticket includedall the food including desserts, anda variety of drink options. Laichesaid the Rotary Club of Gonzales isespecially thankful to the food ven-dors because they provide the food

and people to serve it free of charge. “It would not be possible without the partnerships that wehave cultivated with these busi-nesses over the past 19 years,” hesaid.

“More than just great food, themoney raised from the event goesto support a very worthy cause,”said Laiche. “The St. TheresaFood Pantry provides food to hun-dreds of citizens in AscensionParish each year and they rely ondonations to stock their shelves.”

I Not long ago a couple of co- workers of mine decided to stopby for a moment to try to strike anerve with me over my aggrava-tion of having to be at work onthat day. The comment they ut-tered went like this: "Since yougonna be out here all the time,then maybe you should be writ-ing about the wildlife you see outhere at the plant, since it doesn'tappear you'll be able to go intothe great outdoors anytimesoon." Well there's a little bit of truth in that statement and thereis definitely quite a bit of wildlifethat takes up residence in indus-trial facilities.

I spent half my life at a localchemical plant and I must say that the amount of wildlife that Isaw there was impressive. Birds of different kinds seem to love these

structures for nesting. Theamount of insects that are at-tracted to the lights in those areasprovide an excellent food sourcefor them and their young. Fire

 water ponds in the facility be-came winter homes for migratingducks, Canada Geese, coots andother shorebirds. It was not un-usual to see animals such as rab-bits, squirrels, raccoons,opossums and coyotes on any piece of the property. The white-tail deer herd at the location wastruly unbelievable. In a year'stime you could witness first handthe entire life cycle of those beau-tiful creatures. In most of theditches that held water for any amount of time small fish, alliga-tors, frogs, turtles and snakescould be seen.

Life in the industry has now taken me to another industrial fa-cility on the opposite side of theMississippi River from my prior

 job site. Although this tract of land has no forest it does providequite a bit of territory for birds,shorebirds and waterfowl. Severalspecies of migrating ducks use

the plants' holding ponds in the winter. Canada Geese are now taking up residence at this facility.

One species of waterfowl, theBlack-Bellied whistling duck isdoing exceptionally well at thislocation. These ducks are fairly new inhabitants of our state,making their first appearance ap-proximately twenty years ago.Most of this species of waterfowlleaves the ponds during the coldof our winter and return as springnears. The returning flocks nest

 vigorously throughout the sum-mer on the provided habitat. It'sbeen quite an experience forsomeone who loves waterfowl the

 way I do to enjoy watching theircycle of life unfold from one day to the next.

Our industrial facilities ratherit be chemical, fertilizer, or oiland gas do provide habitat forcertain species of wildlife. Thesebirds and animals feel very pro-

tected at these establishments.Hats off to our local industrialsites for creating an environmentthat can be beneficial for thecreatures of this world. Theirlivelihood on the properties areprobably a good measuring stick of how this industrial world af-fects our own lives.

Industry has provided a greatsource of income for many of usin our area. The need for the ma-terials they make are needed

 worldwide. But unlike the birdsand animals that call these placeshome, if it were not for themoney they pay I would nevercare to be near one of thosenoisy, stinky son-of-a-guns....

Pity poor Romeo and Juliet who met their tragic demisesimply because of their last

names. Now pity poor “Black Cat” Bill whose bad luck by any other name-rotten breaks, badbeats, buzzard luck-has seemedto rival the star-crossed loversover the past few weeks.Beginning with my MarchMadness bracket championMichigan State being bouncedin the first round andcontinuing through April 6

 when another one of my idolsMerle Haggard crossed over

into Hillbilly Heaven on his79th birthday.

Shakespeare had a name forit-“fortune’s fool”- but

 whatever this Joe Blfsplk cloud(Google him under “Lil’

 Abner”) is hanging over my head needs to hurry up and finda silver lining soon. Hell, I wasscared to even get out of bed on

 April 14-the universally-recog-nized “Bad Luck Day of the

 Year” when Lincoln wasassassinated, the Titanic sank and the Apollo 13 astronautsinformed NASA, “Houston, we

have a problem.” And don’teven mention Tax Day.

So I decided to take Merle’sadvice-“I think I’ll just stay hereand drink…” –and plan acouple of parties to help me“shake the yoke of inauspicious

stars” (Romeo, Act V). Besidesthe LSU Spring Game, I cameup with a couple of otherreasons to make merry inlate April and early May-as if 

 we needed an excuse inSouth Looziana.

First of all on April 23Shakespeare celebrates his452nd birthday giving womengood reason to quote Juliet (seeabove) and men good reason todrink Falstaffs. And I’m sure he

 wouldn’t mind sharing the stage with a fellow poet like theHag-especially since they madetheir exit almost to the day 400

 years apart and both died on hisrespective birthday.

Then on the first Saturday inMay, the Kentucky Derby iscontested allowing women todon outlandish hats and men toruin perfectly good whiskey by attempting to make mint juleps.

Now my personal history of picking winners in the Derby is

 well-documented and reads likea Shakespearian tragedy ranging

from a namesake failure-DollarBill, 15th of 16 in 2001-to afutile attempt to exorcise my personal devils-DemonsBegone, carted off in anambulance in 1987.

So this year, I thought I

 would combine the twoholidays, throw away the racingform and let the Bard of Avonand the Okie from Muskogeechannel their selections tome-relying mainly on the namesof horses that either or bothmight appreciate.

Now before you write thisoff as another one of myhare-brained ideas, rememberthe words of Richard lll in oneof the Bard’s greatest plays, “A 

horse, a horse! My kingdom fora horse!” And Hag sang a duet

 with his old buddy WillieNelson not long before hisdeath that included “A HorseCalled Music”. And don’tforget, one of my few Derby 

 winners was picked strictly by aname that reflected my drinkingphilosophy-“I’ll Have Another”at 15-1 in 2012.

But first, a brief lesson onhow racehorses get theirsometimes strange-soundingnames…

One of the greatest horses of 

all times, the magnificent mareZenyatta, was named after analbum by The Police, a rock group that once included Sting.

It seems the horse’s owner Jerry Moss had signed the group to arecording contract at A&MRecords which he ran withformer Tijuana Brass memberHerb Alpert. Moss also owned2005 Derby winner Giacomo-a50-1 longshot named afterSting’s son.

In other cases, the horse’sname comes from his or herbloodlines. The 2009 Derbyfavorite I Want Revenge was

sired by Stephen Got Even, abeaten favorite in 1999. Alas,the “Revenge” factor didn’t

 work out in this case as the colt was scratched the morning of the race due to injury.

One of my favorites-the greatNative Dancer-had a fathernamed Polynesian and a mothernamed Geisha. And one of theDancer’s offsprings-KauaiKings-would go on the win the1966 Run for the Roses.

Sometimes owners will choosea name simply out of spite.Calumet Farms’ owner J.T.Lundy was so unhappy with abankruptcy magistrate’s rulingthat he named a horse JudgeSmells. The Judge turned outto be a decent sire throwing off a pretty good runner calledOdor in the Court.

If you want to name a horseafter a famous person, you mustfirst get written permission.Now there are ways around it as

evidenced by stakes-winningfilly Oprah Winney or a coltnamed Stevie Wonderboy. Andin this year’s Wood Memorial-abig Derby prep-the pace setter

 was a Rambling Rose-coloredspeedster named MattKing Coal.

One-named horses were oncethe rage as owners dreamed of finding another Citation orSecretariat (name by theowner’s secretary). My

favorite for that group was asingle-word play on a familiarphrase-Atswhatimtalkinbout-a

“Who’s on First?” but I gotsome cheap thrills and someshow money out of it. By the

 way, one of that colt’s owners was a modern-day Shakespeareby the name of StevenSpielberg.

Once a horse’s name evenchanged the English language-

 just like the Bard and Hag usedto do-especially in the field of sports journalism.

The great Man O’War suf-

fered the only defeat of his21-race career at Saratoga whena poor start left him half alength behind at the finish line.The highly-unlikely winner’sname? Upset

That term from the 1919stunner has become synony-mous with longshot victories as

in “Delaune Scores Major Upsetat the Masters”.

But enough of my “Banana-fanna-fo-fanna” name games.It’s time to hear from ourunearthly experts. Now if wecould crank up the Way Back Time Machine and bring Willand Merle back into the pres-ent-having the Bard absorb allthe cultural literacy and uselesstrivia of our era along the

 way-perhaps we could list someof this year’s Derby contendersand get their opinions on each.

 With regard to seniority, Mr.Shakespeare, would you like togo first…?

1. Cupid-“Since I used love atfirst sight as a method to speedup the plot in most of my plays,this horse looks like the one Icould fall in love with.Remember, not only did I have

classic couples like Romeo andJuliet and Hamlet and Ophelia,I had the Fairy Queen Titaniafall in love with a donkey-manBottom in “Mid-SummerNight’s Dream”. Not tomention the confusion I caused

 with twins in the “TwelfthNight” where there were men

 who loved women who lovedmen-and women who loved

 women every now and then.So the Bob Baffert-trainedgray is my favorite to win thebettors’’ hearts at theKentucky Derby.”

Merle, your turn…2. “Well, as everyone knows,

I had a little trouble in my  younger days so the nameUnbridled Outlaw jumped outat me. But he doesn’t haveenough points under theDerby’s confusing new systemso I’ll take Gun Runner for allmy San Quentin buddies whostay off ‘The Fighting Sideof Me’.” Will, you’re up…3. Exaggerator-“One of my 

favorite characters in the two‘Henry IV’ plays is a fat, vainand boastful knight Falstaff who

spends his time drinking (notthe New Orleans-based beer

 which bears his name and wasalluded to earlier in thisdebacle) in the Boar’s HeadTavern. If ever there was anexaggerator, it was Sir JohnFalstaff who almost cost PrinceHal his throne. The horse has

never beaten the Derby favoriteNyquist but if the latter shouldrun like he’s on Nyquil, then itis no exaggeration to see theSanta Anita winner in the

 winner’s circle.” And Hag…4. Outwork-“After I

recorded ‘Working Man Blues’,somebody called me the‘Working Man’s Poet’. I kindof liked that title and I like ahorse that can outwork every other animal on the track. I’llkeep throwing horseshoes overmy left shoulder until trainerTodd Pletcher puts the garlandof roses on this colt on May 7.”

So there is your Kentucky Derby trifecta box-Cupid andExaggerator from the Bard of 

 Avon and Gun Runner andOutwork from the Okie fromMuskogee. And hopefully, our

couplet at the race’s conclusion will be a line from each-“Stoprolling downhill like a snowballheaded for hell” and “All’s Wellthat Ends Well”.

at Park Place This month I took time to see and listen toRyan Foret & Foret Tradition at Park Place.

For me it took me back to a time when dancing was fun and possible. I had heard these guys weregood and they were right. But even

better than the sound was the selection of theirmusic selections. Music that you can’t keep

from using your dancing shoes. From the veryfirst song the dance floor was full.

Foret Tradition consist of Ryan Foret,Mike Broussard Jr., Lynn Boudreaux,

Mark Templet and Allan Maxwell. Local saxplayer Denver Mayeaux sat in for the jam.

My son constantly shows medumb stuff he sees on the net. YouTube videos of dumb people tryingto dumb stuff. He showed me akid trying to touch the middle of spinning blades at the bottom ablender. After the third attempt hefound the blades and a trip to thehospital.

He came to me last week and with a grin on his face, I knew he was going to show me somethingstupid again. “I have great newsfor you Dad”, he said, “drink allthe beer you want!” I told him it wasn’t my birthday and then heshowed me his phone with adisplay showing, Benefits ofDrinking Beer. Wow. Are youkidding me? I finally did

something right in life. Ideveloped a taste for beer toimprove my health.

My day and life is looking up.Guilt is poring from my body forall those days I didn’t wait till

noon or 5 o’clock. I feel my bloodpressure dropping as I drink. As a food source little did I know 

I was adding fiber to my existinghealth benefitted beer drinking. While in college one morning with

no milk I used beer in my FrostedFlakes. I killed two birds with onestone. I gained some fiber whilestarting my Saturday game dayoff right.

Beer is famous and can be yourbest friend. There are times it’s al- ways by your side. It’s there when you experience your 18th, 21st,30th, 40th, 50th and soon to be60th birthday.

Cases of beer made Katrina andGustave much more bearable in

the heat and dark nights.Beer has inspired so many 

great songs through time,ZZ Tops ‘Beer Drinkers andHell Raisers’ and Jimmy Buf-fets ‘It’s 5 o’clocksomewhere’ and many more.

Beer makes golf a lot morefun and sometime it makes your game better. I’ve seengood golfers start having abad day early in their round.They take to drinking a few and miraculously shots startflying true. At least we think so. During a tournament my buddy Wild Bill hit aremarkable shot up close tothe hole. He turned andsmiled saying, “That’s a 2beer swing boys! Can Ihave another?”

This past Easter I discov-ered me drinking beer kept someof my golfing buddies closer to theLord. After giving up beer forLent. Since I’m not Catholic andsome of my buddies on the golf course are they ask me during amoment of weakness, to drink onefor them. They keep their vowsand my golf swing was improving.Hell, I was having to drink 2 or 3for some guys and a sip for Carl.

I didn’t think about at the time.I enjoyed guiding and assisting my beer drinking flock but shouldhave asked if their vows preventedthem from purchasing beer. Now that Easter has come and gone my  wallet is a little thicker.

 AscensionCounselingCenter LaunchesResource ReferralDepartment

 Ascension Parish President Kenny Matassa announced the AscensionCounseling Center is launching a new Resource Referral Department.

“This service being offered by our As-cension Counseling Center will enableparish residents to find the help they need, whether it is health services orthe large umbrella of social servicesthat are available here in AscensionParish and the surrounding metroarea,” said President Matassa.

Suzanne Hamilton, director of the Ascension Counseling Center, saidthese types of services are usually freeor low cost. Hamilton said GinaMelancon, a registered nurse at thecenter, will oversee the department.

“We think of it as a ‘one stop’ to getany kind of assistance that one mightneed,” Hamilton said. “For instance if our clients come and need other kindsof help in addition to the counseling we provide to them, Gina will link them to people who offer help fortheir particular needs. Gina actively seeks out entities, churches andagencies in the community that willhelp people in any kind of need.”

For instance, Melancon saidmedical home models are available toindigent populations in the parish.The medical home is best described as

a model or philosophy of primary carethat is patient-centered, comprehen-sive, team-based, coordinated,

accessible, and focused on quality andsafety, according to the Patient-Cen-tered Primary Care Collaborative. Ithas become a widely accepted modelfor how primary care should beorganized and delivered throughoutthe health care system, and is aphilosophy of health care delivery thatencourages providers and care teams tomeet patients where they are, fromthe simplest to the most complexconditions.

“This will provide those patients witha primary care doctor who can referthem to specialists through the LSU

system so that it is no cost to thesepeople that don’t have any insurance,”Melancon said. “They are a branch off of St. Elizabeth Hospital and have aclinic at the health unit next to thecounseling center.”

Melancon said resources availableinclude those for autism, supportgroups, pediatrics, utilities aid,housing, employment, educationalprograms, food banks, addiction detoxfacilities, health screenings, femalehealth services, domestic abuseshelters, vision and dental services, cri-sis intervention, and aid provided by 

churches to name a few.

“There are so many people in need inour community and there are so many resources out there,” Hamilton.“Because we are so close to it, we seethe resources and we think everybody knows about them but they don’t. Soit’s really important that we come up with a way to get this information outto the community.”

Cook Time:6 minutes

Ingredients:

½ lb peeled Crawfish Tails (with fat)2 lbs boiled red potatoes1 cup boiled corn (cut off the cob)¼ cup green onions- thinly sliced1 clove boiled garlic1 link boiled sausage- roughly chopped1 cup mayo¼ cup Creole mustard1 Tbls Creole seasoning

Batter Ingredients:

1 cup vegetable oil2 cups milk & 2 eggs (whisk together)2 cups flour4 cups Panko bread crumbs

Method:

Reheat your potatoes using either the microwave or byre-boiling them for about 5 minutes. In a large mixing bowlcombine the heated potatoes, corn, chopped sausage, greenonions, garlic, peeled crawfish tails, mayo, Creole mustard, and

Creole seasoning and mix well. Take your mixture and forminto cakes, approx 3 oz each.

In a medium sauté pan, heat your oil over med hi heat. Nextdredge your cakes in the flour, then the milk and egg mixture,and finally in the Panko bread crumbs. Gently drop your cakes,2 to 3 at a time into your heated oil and cookapproximately 3 minutes on each side. Remove from heatand allow to cool 2 minutes before serving.
